gotta ask: what exactly is NY style pizza? From what I can tell from movies, it looks like greasy cheese-covered crust that you can fold over and stuff into your mouth...is that IT??? The ability to FOLD makes it NY Style?

NY style for me is all about the water used for the dough. You can definitely taste the difference.

HATE deep dish. The only deep dish that I can tolerate comes from Green Mill. Gimme a thin crust, crisp, pie cut any day of the week.

Yes and no. It's thin crust, and it's foldable, but it shouldn't have greasy cheese and soggy crust. It's nice and chewy. That's NY (also NJ/Philly) style. Deep dish is more traditional for Chicago.

Our thicker crust pizza is Sicilian style, which is cut into squares, not a round pie cut into triangles. That's thick and soft, good stuff.

And honestly? The thing that ruins a good pizza for me is just too many toppings. When I make homemade pizza, I limit my toppings to no more than three, and even that's a lot, depending on my mood. Sausage, mushrooms and black olives at the most. And normally when I get pizza out somehere, I stick to cheese or just one topping. The nice chewiness of the cheese binding with one or two toppings is what makes pizza awesome. When you have it so loaded up that the cheese can't hold everything together is when pizza sucks.
