Best film? The Thing, hands fucking down. Everything about it is perfect. Everything. Story, character, tone, music. All of it was what helped usher in the genre gold that Carpenter was at one time capable of producing. The only remake worth a shit.
Most enjoyable? Big Trouble in Little China. Look for the cameo of John Carpenter in the wheelchair*.
