Automatically calibrate your instruments when given the chance. That overcomes the lag. Don't even attempt to manually do it.

They are the greatest band ever of all time! It makes so much sense that they made Beatles Rockband edition. This game is 1,000 times more fun than mailbox baseball with zombies! OH MAN, zombies get made when you hit their mailboxes.
