Tonight I indulged in an Italian poutine.

Switch that brown sauce for a meat sauce and you're good to go.

Which brings to mind a question I keep forgetting to ask you - is there any kind of specific cheese that's used for the poutine? And if so, would you swap out that kind of cheese for mozzerella in the Italian version?

yup. Not as great as a regular one, but sometimes I crave it.

Fresh cheese curds. Always. Anyting else and you have some other variation of chili fries, etc...
