57. Tater Tot Hotdish

When prepared correctly, it's awesome. I know, I know...it's a Minnesota/Midwest thing, but the hell with it...It's totally awesome to eat in the cold winter months.

What's a tater tot hotdish????

There are many variations on it, but all of them include:
- ground beef
- corn
- Campbell's cream of mushroom soup
- tater tots

Other things I've seen included:
- mashed potatoes
- green beans
- carrots

You essentially cook the ground beef with plenty of onions and garlic, stir in a can or two of the soup, stir in a can of corn, and put it all in a crock pot. On top of the mixture you create a layer of tater tots. Heat it up for a couple of hours and serve. I find that tabasco sauce on top of it makes it sing...

So it sounds like Shepard's pie but with tater tots instead of mashed taters (Hmmmm Mmmmm).

These ingredients and the combination of the two is, indeed, familiar in my native land.

Pretty sure they use all their water to brew Guiness, period. Guinness showers. Guinness lawn sprinklers. Guinness in your car radiator.

Take it from me, we've little need for lawn sprinklers. I kinda wish we did, though; it'd be awesome to have an excuse for a Guinness Lawn Sprinkler.

58. Campbell's Bean with Bacon soup.

59. Duck Confit

Duck leg, cured in salt for a day to remove the blood, and then poached in duck fat. Not difficult to do, but it takes some time (cure and then poach 3 hours), and it's better to do it in big batches. Or you can buy it.

Used in many dishes (like cassoulet), salads or sandwich. Like the one I'll eat tonight.

Whilst not warm, Guinness is supposed to be served room temp. No cooler for that keg.

We do ours in the oven to get a nice crisp on the tots.
