Mom’s hamburger soup: ground beef, big ass can of tomato juice and frozen mixed veggies. Stir in some seasonings of your choice(I go with garlic, onion, basil and bay leaf) and simmer for a while. Drop biscuits on the side and nom. Good comfort food, I just wish it hadn’t been 83 degrees today.

Made that lamb rack, roasted potatoes, and broccoli. Lamb was good, but the new oven temp is totally off. It runs cold for sure. The fat cap did not render at all. I ordered an oven thermometer to check the real temp, and see if we can calibrate it.

Sam the Cooking Guy’s chicken chimichangas. They were relatively easy to make, simple ingredients(which was perfect for this picky-ass household) and tasty AF. Made some pork schnitzel with roasted squash/apples and a tasty quick potato salad made with shallots, mustard, vinegar, and some pancetta I crisped up in a pan prior.

No problem. Basic recipe below. But make it your own and it'll be even better.
That being said, I changed it up and it was awesome. I made legit taco meat (with the seasoning in a packet and water). I used pico instead of straight tomatoes (just drained it completely). And added hot sauce at the end. Otherwise, that video takes you through it perfectly. My only suggestion is to lower the heat when frying it.
