Saturday after my work Christmas party my friends and I continued our tradition of heading out for proper drinks and some late night grub. Went to the latest location of our favorite seafood joint, and I had loaded hushpuppies.
Hushpuppies the size of ping pong balls, with roasted potatoes, bacon jelly, and queso. FUCKING AMAZING.Comment

Made another batch of the BDR white chicken chili.
Also used our InstantPot for the first time this weekend and made pho. Holy shit man. 30 mins for a broth that tasted like it had been simmering for hours. That shit is LEGIT. Best 60 bucks we've spent in a long time. Martin, any other pressure cooker recipes you dig that aren't too crazy expensive? My buddy said he makes ribs by just placing ribs in the fucker, dumping some sauce in, and cooking for 20 mins. They could charge four times as much and it would still be a deal. Had roasted brussel sprouts, the sweetbreads with white anchovies, the spaghetti with black pepper (seriously I will never had red sauce on spaghetti again after that), and the ricotta gnocchi. Our cocktails (one was named the Ava Crowder which holy fuck amazing) were incredible. And the waitress was amazing and cool and comped us a plate of the Texas wagyu beef carpaccio with FOUR kinds of egg yolk, three shaved and one in the middle to break and rub all over the beef slices. It was pornographic.Comment
