I read somehweer that the only places in Canada where they havce the axact poutine cheese was, outside Quebec, Eastern ONtario, New Brunswick, and one small place in BC where a ex-pat told a cheesemaker whow to do it correctly. By the way I don't think the difference is that flagrant. It's probably there, as soon poutine nazi would tell, but I doubt it's like putting shredded cheddar or mazzarella on it.
