For me, the best light saber fight was in TESB. Look at how Luke and Vader approach it: Luke with tentative steps using both hands, Vader with quiet calm using one hand. The ensuing fight stays in character and progresses in a believable way. It's not over choreographed and feels like a REAL battle...they look like they're actually aiming for each other and not just flailing their swords around.
